A couple months ago we had a visit from the small-but-mighty Beerlab! from London, Ontario. Adil and Nick are cranking out some of the nation’s best beers, we were pretty thrilled to team up with them.
Molten Mirrors is a saison/lager hybrid we dreamed up, bringing together the things we love about both these styles: dryness, fun little ester profile, and crisp, clean drinkability.
Brewed with local barley, a decent amount of rice, and a touch of spelt, and moderately hopped with Saphir and Huell Melon. We fermented this beer warm-ish with our house saison yeast, before chilling the beer to 10C, brewing a krausen brew (exact same base, just less volume) that we got rolling with a clean German lager yeast before pumping it into the original brew and capping the tank. Once the lager yeast had finished fermenting, we dropped the temp to -1C and let the beer lager for about 8 weeks.
We’re super pleased with this beer. Crisp, crunchy, and eminently drinkable, with a bit of saison spice and lovely esters to keep it interesting.
